New Mexico is the oldest continuous European settlement in the country and much older than that if you count the pueblos, some of which have been lived in for a thousand years. It has three cultures layered rather than blended, Native, Hispano and Anglo, and the food is the best evidence. The official state question is whether you want red or green. Go for Chaco Canyon, which is difficult to reach and worth it, and be in Santa Fe when the chiles are roasting in September.
