Missouri is the country's hinge, where the plains meet the South and the Mississippi meets the Missouri. It sent people west from St Louis and Independence for a century. Kansas City and St Louis are different cities with different barbecue and a real rivalry, and between them is the Ozarks, which is its own culture.
