Maryland is a small state that contains a surprising amount: Appalachian mountains in the west, the Chesapeake Bay in the middle, and Baltimore, a port city with a strong identity and a complicated century. The bay shapes the food, the economy and the politics. It stayed in the Union while permitting slavery, and Lincoln took extraordinary measures to keep it there. Go for crabs on brown paper with a mallet, and for Annapolis, which has more colonial buildings standing than anywhere else.
