Kansas is wheat, wind and a history far more violent than the flatness suggests. It was Bleeding Kansas before it was a state, a rehearsal for the Civil War fought over whether it would allow slavery. The tallgrass prairie that once covered the middle of the continent survives here in a few thousand acres and nowhere else. Go for the Flint Hills at dusk, which is the closest anyone can get to seeing what the interior looked like before the plough, and eat in Kansas City on the way.
A study once found parts of it measurably flatter than a pancake.
